Aguachile Recipe

These lil aguachiles in a verde or green sauce are such a refreshing, sour and savory treat and are super easy to make.

Step 1: Gather your ingredients.

INGREDIENTS

  • 1. Raw Shrimp (obviously the better quality, the better and save time by buying pre-peeled and de-vained shrimp.)
  • 2. Lime (2 is fine for this recipe)
  • 3. 1 Red Onion
  • 4. 1 Bushel of cilantro
  • 5. Cucumber
  • 6. 2 Jalapeños
  • 7. 1 Chile Serrano
  • 8. 2 Cloves of Garlic
  • 9. 1 Avocado
  • 10. Corn Tortillas
  • Salt

Step 2: Defrost your Shrimp (If frozen)

Step 3: Cut your shrimp in half to create thinner.

This will help the shrimp absorb the juices better. Proceed to put the shrimp in a bowl.

Step 4: Grab your juicy limes

Step 5: Squeeze the lime juice of both limes over the bowl of raw shrimp and set aside. The lime juice will cook the shrimp (Let shrimp sit in lime juice at least 15 mins).

Step 6: Add 3/4 of your bushel of cilantro (save 1/4 as a topper later), 2 garlic cloves, 2 jalapeños, 1 serrano pepper, 1/2 of your cucumber (save 1/2 for topper later), add the lime juice water the shrimp has been sitting in, Salt (to taste)

Step 7: Blend well until very smooth and watery without any clumps. (add more lime juice if needed)

Step 8: Pour over Shrimp

Mix well and set aside

Step 9: Chop the red onion

Chop the onion into not so thin slices as shown below (feel free to go thiner)

Step 10: Soak the onion in water with a splash of vinegar and salt for a few minutes (This takes out some of the pungent onion bite)

Step 11: Chop up circular cucumber slices

Step 12: place cucumber, cilantro and red onion in bowl for presentation. This can be ready to serve if you have corn chips laying around, but if you want to do things right, make your own.

Step 13: cut corn tortillas into 4 pieces

Step 14: Fry or bake the tortillas (frying them tastes better)

Set aside once crispy but not burnt

Step 15: prepare and enjoy! make sure you get a little piece of everything in your bite!
